Chicken Afritada Recipe


Here is another delicious tomato based chicen recipe - Chicken Afritada. If you can notice, Filipino really likes to cook foods cook with tomato or tomato sauce base recipe which turn food not only delicious but also nutritious ( Tomato is rich in vitamin, beta-carotene and so on).  I already posted some pork  dishes that are tomato sauced based recipe like morcon, menudo, mechado, kaldereta, mechado and here is other filipin o chicken recipe that will surely grab your attention - Chicken Afritada. Basically,afritada  is a stew of (pork, beef, chicken) with potato, carrots and other vegetable ingredient. Let us now begin preparing this another mouth watering filipino recipe - Chicken afritada Recipe.

Ingredient :

  • 3 tbsp garlic
  • 1 onion head ( medium sized) Chop
  • 2-3 cups of water or chicken stock
  • 3 tbsp cooking oil
  • 1 kg of chicken cut into serving pieces
  • 1 pc red bell peppe (julienne)
  • 1 pcs of tomato
  • 1 pack of tomato sauce (small)
  • 1 bay leaf
  • 1 pc chicken cube
  • 1/4 tsp ground peppercorn
  • fish sauce (patis) 2 tbsp
  • 4 pcs potato (peeled and quarter)
  • 2 pcs Carrots (cut into cubes)
  • salt to taste
  • Vetsin (monosodium glutamate)

Procedure of cooking for Afritada:

  • In a heat pan with 3 tbsp oil, sautee minced garlic and slice onion, add tomato and simmer for 3 minute while constantly mixing.
  • Add chicken, patis and simmer for 5- 10 minute or until the chicken start to tenderize.
  • Add potato, bayleaf, carrots and red bell pepper.
  • Add water and chicken cubes, peppercorn.
  • Let it boil, cover and simmer until the chicken is cook and tender.
  • Add vetsin and salt to taste.
Served hot chicken afritada in a platter with steamy rice.
