Mechado Recipe

mechado recipe beef, one of th most delicious and flavourful filipino beef recipeBeef mechado recipes or Filipino beef stew  has become one of favorite menu in Philippines especially whenever there is  special occasion such as christmas. This popular filipino food has a lots of variation on procedure of cooking as everybody almost has their own system of cooking. Mechado is mixture of beef cubes along with pork with some fat to render pork oil that makes this food more flavourful. I remember when i was a little girl i really like to make sandwiches by filling mechado filipino beef stew sauce on my pan bread, Here is my procedure preparing delicious mechado filipino recipe.

  • 1 kg beef cut into cubes
  • 1/2 kg pork liempo(belly fat) cut into cube
  • 2 Tbsp of olive oil or margarine
  • 6 cups of water
  • 3 Tbsp minced garlic
  • 4 pc medium size onion (chopped)
  • 5 pc Tomato big
  • Aji ginisa / Vetsin/ Beef seasoning
  • 1 cup Soy sauce
  • 1 cup Tomato sauce
  • Liver spread (reno)
  • 1 pc of carrots, cut into square
  • 3 pc potato, cut into square
Procedure of cooking

In a large pressure cooker, boil 6 cups of water along with the beef and liempo ,3 pc of onion and soy sauce (leave some for saute), when the pressure start to whistle turn the stove to low fire to simmer for 45 minute, then check if the meat is tender and add water if necessary. In a separate pot, heat oil and saute garlic, onion, and tomato, cover. Add tender meat and fish sauce when tomato is well done, cover and let it simmer into few minutes. Add 1-2 cup beef broth ( where you tenderized your meat) and potato and carrots, let it boil and simmer until potato and carrots are done, lastly add tomato sauce, beef cubes, vetsin annd simmer for a few minute and lastly add reno liver spread to thicken. Served  Mechado recipe beef with steamy rice.
