Morcon Recipe

Beef morcon recipe, one of the best filipino recipes during any celebration especially christmas, morcon has become filipino christmas recipe because during my youthful noche buena is not complete if there is no morcon in the table, my mother usually prepare homemade choco drink with peanut, chinese ham, queso de bola and off course everybodies favorite during christmas -morcon, that why my mom calls it lutong pasko, it is a beef roll filled with different ingredient and here is my system for preparing it.


Morcon Ingredient - Filipino Christmass Beef Recipe


  • 1 kg sirloin beef - cut thinly and widely
  • Sausage,cut into strips
  • Ham, cut into strips
  • Grated cheddar cheese
  • Carrots, cut into strips
  • Pickles
  • Bacon , cut into strips
  • Hard boiled egg, cut into quarter
  • 2 tbsp calamansi juice
  • soy sauce
  • 1/4 cup cornstarh dissolve into 1 cup water
  • 3 tbsp flour
  • 2 heads onion, sliced
  • 3 cubes beef bouillon/ vetsin/ salt to taste
  • 1/2 tsp peppercorn
  • 5 cups beef broth or water
  • 1/2 cup tomato sauce
Procedure of Cooking:

  • Marinate the beef slice from the soy sauce and calamansi juice for 5 hours
  • Lay the slice beef into big platter and add strips of cut bacon, ham, sausage, carrots, pickles, i slice of hard boiled egg, gared cheese.
  • Roll the beef and make sure that the filling stays inside
  • Use a thread to tie.
  • Roll in flour and fry into frying fan until it golden brown
  • Follw the same procedure for the remaining ingrdient.
  • After frying, place the beef into the pressure cooker add 5 cups of beef broth or water and 1/2 cup of soy sauce and slice onion and peppercorn.
  • Bring to boil and simmer for 1 hour until the beef tenderize, add water if needed.
  • add tomato sauce and simmer for 15 minute while gradually mixing, add vetsin and salt to taste
  • Pour the dissolve cornstarch to thickened.
Preparation:

  • Slice the beef and place some in a clean big platter
  • Add thickened sauce at the top
  • Serve beef morcon recipe with hot steamy rice.
