Camaron Rebosado ( Battered Shrimp Recipe)

Camaron rebosado recipe or fried battered shrimpcan be compared with Japanese recipe tempura. While camaron is a popular filipino shrimp recipes, originally it is a chinese recipe. You could always find camaron (battered shrimp) in every big chinese restaurant here in the Philippines. This recipe is best not just for viand as well for appetizer for drinking. Here how i prepare battered prawn recipes. I hope you would try and like camaron rebosado recipe.


Ingredient:
  • 1 kg shrimp (big)
  • 1 tbsp rock salt
  • 2 tbsp calamansi juice
  • 1 cup cooking oil
Batter:

  • 2 egg, slightly beaten
  • 2 cup of cold water
  • 3 tsp baking powder
  • 3 tsp all purpose flour
  • 1/2 tsp salt

Sweet and Sour Sauce

  • 2 cups of water
  • 2 tbsp sugar
  • 1/4 cup of banana catsup
  • 3 tbsp hot sauce
  • 1/4 cup of cornstarch dissolve in a water for thickening
Preparation of Cooking:

  • Remove shells and head of the prawns, leave the tail, Cut the backs of the shrimp and devein .
  • Heat the cooking oil in deep wok or frying pan.
  • Wipe the shrimps to dry with paper towels and  marinate using calamansi juice with salt. In a big bowl, place the remaining all purpose flour, baking powder, egg.
  • Mix lightly.
  • Hold each shrimp on its tail, and dip until it was completely covered. Deep fry carefully  into the hot oil. Repeat the same process with the remaining shrimp.
  • Fry until it turns into golden brown and crispy.

Preparation of Sweet and Sour Sauce:

  • Mix all of the ingredient, bring it to boil
  • Add water with cornstarch to thicken
Served camaron rebosado hot with sweet and sour sauce on the side.
