Bicol Express Recipe

Bikol express recipe is a popular dishes on the southern part of the Philippines, Bicol. People from Bicol or bicolanos usually like to prepare hot spicy recipe for their viand. They are also known for using coconut milk as a main ingredient for their recipe. But the popularity of Bicolanos recipe has extend not only in Bicolandia but also all throughout the Philippines. I was born and raised in Manila but I really love their native food as a matter of fact, I post laing as a first menu on my original native  filipino recipes, which is one of my favorite filipino vegetable recipe. Anyway, here is my method of preparing this delicious filipino dishes - Bicol express


  • 6 cups of of sliced green chilli pepper (Siling pangsigang)
  • 1 1/2 tbsp salt
  • 3 cups of fresh alamang
  • 1/2 kg of liempo, cut into strips about 1 cm. thick, 1 inch long
  • 2 tbsp of minced garlic
  • 1 head of onion, slice
  • 2 cups of coco milk (gata)
  • 1 cup of coco cream (kakang gata)
  • Salt to taste
  • Vetsin
Procedure of Cooking for Bicol Express Recipe

  • Remove the tip stalk  of the siling haba (Pangsigang), cut down the middle and  take out the seeds. 
  • Dip in salinated water for about 15 minutes.
  • Put on the strainer and drain well. In a casserole, put coconut milk, alamang, pork liempo, minced garlic, chop onion, and salt, boil and simmer for 10 minutes.
  • Add long green chilli and simmer until the sauce dries up
  • Pour coconut cream to dry until the pork start to renders oil, add vetsin and salt to taste.
Served this hot & spicy bicol express with steamy rice.
