Sarciadong Isda With Tomato Base Sauce

sarciadong isda is a fried fish with a sauce baste on tomato, it is very popular for day to day dishes
Sarciado or sarciadong  isda is a everyday recipe in the Philippines as there are a lots of seafoods and fish in our country. Every body likes to prepare sarciado not only for the simplicity of the process but also for being nutricious. We always use bangus (milkfish) as the main ingredient but any kinds of fish can be used also, maya maya (red snapper), lapu lapu (grouper) is perfect for this filipino fish recipes but this kind of fish is much expensive compare to bangus. Anyway, any kind of fish is perfect with this filipino dish just like galungong ( hard tail mackerel, round scad) which is very much affordable in the Philippines. Here is my method of cooking this original pinoy recipe- sarciadong isda.

Ingredient ;

  • 1 kg of Bangus or any fish listed above, scale, clean and salted
  • Cooking oil to fry bangus
  • 1/2 head of garlic, minced
  • 2 pcs onion, cho1 cup of water
  • 2 tbsp ginger, cut into strips
  • 12 pcs ripe tomato (big), chop
  • 2 tbsp patis
  • vetsin
  • salt to taste
  • 3 eggs, briskly beaten
Procedure of cooking for fish sarciado
  • In a pot, fry the clean salted bangus, set aside.
  • In a separate pot with cooking oil, sautee garlic, onion, ginger.
  • Add tomato and patis to boil, cover and simmer for 10 minute oruntil the tomato softened.
  • When the tomato is soft and well done, add 1 cup of water to boil and simmer for another 5 minute.
  • Add  salt to taste. let it boil.
  • Turn off the stove while pouring beaten egg.
Preparation fo serving

  • Put the fried fish on a platter
  • Scoop and add sauce as a topping of fish
Served sarcidong  isda recipe  with hot steamy rice.
