Fish With Black Bean Paste

Tokwa't isda (Fish tofu) is another Filipino recipe that become a regular food staple in table, it is another version of fish tofu recipe with a little similarity from totso recipe.The main ingredient for tokwa't isda is a popular Filipino flavoring know as tausi, it is a fermented salted black bean paste, the taste is sharp and pungent. Originally it is known as a flavoring in Chinese cuisine and in Vietnam it is commonly known as Tau xi or Dau xi. Here is one of my favorite Chinese food and it is lically known as Tokwa't isda (Fish tofu).

Fish Tofu Ingredient:

1 kg maya maya (Red snapper)
1tsp salt
1 cup flour
Vetsin
3-4 pcs tofu cake, cut into cube
3-4 tbsp black bean paste
2-3 tbsp minced garlic
1 onion, sliced
2-3 thumb size ginger, slice into strips
Cooking oil
Constarch for thickening (1/2 cup of cornstarch dissolve with 1/2 cup of water)
Spring onion, slice

Procedure for Cooking Fish Tofu:

Slice and clean mayamaya fish, dredge with salt, vetsin, and cornstarch, fry quick from high fire. Blanch tofu in boiling water for 1-2 minute, drain and set aside. In pan saute garlic, ginger, and onion. Add black bean paste and simmer for few minute. Add 2 cups of water and pound black bean paste using laddle, simmer for few minute and add water if needed. Add vetsin, tofu and slurry to thicken sauce. Place fried fish in a platter and add sauce to cover the fish, garnish with spring onion. served fish tofu with black bean paste with hot steamy rice, enjoy.
