Estofado Recipe

Estofado is a popular filipino recipe, it is always prepared during special gathering like christmas or fiesta. Aside from lengua estofado (popular which is the most popular variation of estofado using pig or cow tounge) pork, chicken or beef can be also used instead. Heres how I prepare pork estofado and I hope that you would like my version.

Pork Estofado Recipe Ingredient:

  • 1kg of pork, cut into cube
  • 1/4 cup brown sugar
  • 1/2 cup soy soysauce
  • 1/4 cup white vinegar
  • 1 tbsp crushed peppercorn
  • cooking oil
  • 1 pc chorizo de bilbao slice diagonally
  • 2-3 tbsp minced garlic
  • 1/2 cup tomato sauce
  • 1 pc carrots, cube
  • vetsin
  • salt to taste
  • Reno liver spread
  • 3 pcs saging na saba, cut diagonally and fry
Pork Estofado Procedure of Cooking:

In a mixing bowl combine, brown sugar, vinegar, soysauce, vetsin, peppercorn, minced garlic,stir carefully and add pork cube to marinate, refrigerate for not less than 3 hours. In frying pan, fry pork until lightly brown, remove excess cooking oil then add marinate and 1/2 cup of water to cover the meat, Bring to boil and simmer until the sauce decrease by 1/2 in volume, add carrots and chorizo de bilbao, simmer until carrots tenderized. Add tomato sauce and add salt according to taste, simmer for another 3-3 minute then add liver spread to thickened and enhance flavoring. Transfer in serving bowl and garnish with fried saging na saba, served estofado recipe while it is hot with newly cook white rice.
