Paksiw na Pata

Paksiw na pata recipe or paksiw na pata is well known dishes in the Philippines. For me, i prefer a thicker sauce of paksiw na pata by continously boiling until the sauce dries and start to thickened. there are times that i have to add some pork meat because the pata is to bony for my kids. here is my system for preparing this filipino pork rmenu - paksiw na pata

Ingredient :

  • 1 Whole pata (front leg), Cut into serving pcs
  • 1 kg of liempo cut into square
  • 1 cup of toyo (soysauce)
  • 1/2 cup of vinegar
  • 1 1/2 liter of water
  • salt to taste
  • vetsin
  • Bulaklak ng saging (banana blossom)
  • brown sugar ( half cup)
  • 1 clove of garlic, minced
  • 3 pcs saging na saba, cut into halves
  • 2 tbsp of peppercorn
Procedure of cooking for Paksiw na Pata

  • In a pressure cooking, wash and boil the pata and liempo meat.
  • Add peppercorn, garlic, and salt. let it boil for 1 hour, check if the meat is tender, add water if needed.
  • When the meat is tender, add banana blossom, soysauce and vinegar, boil and simmer for 30 minute.
  • Simmer unti the meat start to separate from the bone.
  • Add salt to taste, vetsin and saba. simmer until the banana is cook
  • Lastly add sugar according to your taste.
Served paksiw na pata recipe with hot steamy rice.

Preparation time 1 1/2 - 2:00 hour
