Escabeche recipe is another popular Filipino food especially during special occasion. The taste of escabeche sauce is similar to sweet and sour taste, It is easy to prepare, economical and good for table presentation .
Ingredients for Cooking
· 1 large fish (Lapu-lapu or Tilapia)
· Cooking oil
· 2 cm. ginger cut into strips
· 1 pc onion
· 1 cloves garlic
· 1 small carrot cut into strips
· 1 small red bell pepper cut into strips
· 1 ½ tsp salt
· 1 ½ tbsp brown sugar
· 3 tbsp vinegar
· ½ cup water
Procedure for cooking Escabeche
Clean the fish, it maybe whole or sliced according to your choice. Rub with salt and let it stand for a few minutes. Wash the ginger, removed the skin and then cut into strips. Chopped onion and garlic into small pieces.
Preheat the fan. Add the oil and then fry the fish until slightly brown. Remove it from the fan and prepare the sauce.
In the remaining oil, sauté the garlic, onion, and ginger add carrot and red bell pepper. Add the vinegar, water, sugar, salt and let it boil. Then add the fish to the mixture and simmer for 5 minutes. Served escabeche recipe with hot steamed rice. Enjoy...
