Papaitan recipe is a well known Filipino recipe which they say origininated from Ilocandia region. The main ingredient for pinapaitan recipe is the innards of goat or cattle. For me i much prefer to use goat innard compare to cows innard not only for being flavorful but also for being natural (organic). What makes this pinoy recipe exotic is the bile that use to bitter the taste of the broth. If you want to try this authentic filipino recipe here is my procedure of cooking.
Ingredient for Papaitan Recipe:
In a pot with cooking oil, sautee garlic, onion, ginger, add goats innard, patis and bring to boil and simmer for 15 minute. Pour 1 litre of water to boil and simmer until the meat is tender, If necessary add water, tamarind powder, bile juice, boil. Lastly include vetsin, siling labuyo, salt to taste.
Served papaitan recipe with hot steamy rice while the broth is hot garnished with spring onion at the top.
Ingredient for Papaitan Recipe:
- 1 kg of goats innard boiled and simmer for 5 minute, drain and slice into small pcs
- 3 tbsp
- 3 tbsp Garlic, minced
- 1 whole onion, sliced
- 5 thumb size ginger, julienne
- 3 tbsp Patis (Fermented fish sauce)
- 1 litre of water
- 1 pack tamarind
- Goat bile juice
- Vetsin
- Salt to taste
- 1 bundle spring onion, chopped
- 3 pcs siling labuyo, slice
