Filipino Mongo Vegetable

Ingredients for Mongo:



·        1 k pork loin
·        1 tbsp. whole peppercorn
·        2 laurel leaves
·        ½ cup brown sugar
·        2  pc smoked fish (tinapa), shredded
·        2 pcs. star anise
·        1 whole garlic, minced
·        1 pc. onion, chopped
·        2-3 tbsp. soy sauce
·        4 tbsp. cooking oil
·        Water
·        Salt to tast
·        Vetsin or Monosodium glutamate

 

Procedure for mongo recipe

1.   Soak mongo in 3 cups water for 4-5 hours.
2.   In a casserole, put 5 cups of water then add the mongo let it boil and simmer until it is tender. 
      Set aside.
3.   Preheat the fan, add cooking oil. Sautee garlic, onion, and tomato then add bagoong. If   
      bagoong is slightly drying you can now add the pork sautee until it becomes brown.
4.   Add mongo, chicharon and malunggay leaves.  Let it boil and simmer over a low heat   
      until pork is fully cooked. You can add water if needed.  Stir occasionally.
5.   Taste before you season with salt and then add vetsin.
6.   Serve Mongo while it is hot.
