Bopis Recipe

Bopis Recipes is menu that uses pig internal organ such as lungs, heart, esophagus cartilage. This recipe is so popular as this is only way for cooking such pig part for every day viand. For me, i really don't like this recipe but my kids want it so much that i still need to prepare some for them. If you want to try this trully filipino recipe just follow my procedure for cooking bopis .

Ingredient :

  • 1 set of lungs, heart and esophagus (you will find it in Philippine local market hanging)
  • 3 tbsp cooking oil
  • Minced garlic, 3 tbsp
  • 1 pcs onion, sliced
  • 2 pcs Red bell pepper, diced
  • 1 pc Raddish (small), diced
  • 1 pc Carrots (small), diced
  • 1/2cup vinegar
  • 1 tbsp ground peppercon
  • Patis (fermented fish sauce)
  • Laurel leaf
  • Vetsin and salt to taste
  • 1/4 cup atsuete oil
  • 2 pcs Siling labuyo
Procedure of Cooking for Bopis :

Wash the pork meat (heart, kungs, eshophagus cartilage) and brind to boil for 10 minute. Set aside and let it cool to diced, keep the broth to use later. In a heated pot with cooking oil sautee garlic,onion, diced meat and add patis cover and simmer for 5 - 10 minute. Add carrots, raddish, red bell pepper and ground peppercorn and simmer for 2-3 minute. Add 3 cups of meat stock,vinegar, laurel and sili and boil, let the broil dry a litlle and add atsuete oil to color and finally seasoned with vetsin and salt to taste. Served bopis recipe in platter while it is hot with white rice.
