Ampalaya con Carne Recipe

Ampalaya con carne recipe , Ampalaya (Bitter gourd) is a common vegetable here in the Philippines, but when it comes to taste it is not quite popular for filipinos because of the bitterness that the vegetable brings. While ampalaya is well known for its bitterness it is also popular when it comes to nutrition. Now a days, there are a lots of herbal products that are made of ampalaya which claims to help people that suffer from diabetis which proved how nutritious ampalaya is. But here is my ampalaya recipe which you will really loved - ampalaya con carne. Basically, ampalaya con carne is a beef stew cooked with a strips of ampalaya. Everybody has their own way of cooking  this ampalaya recipe and I have my own too, I have also some technique to lessen the bitterness of ampalaya but it will also lessen the nutrients the vegetable has. Anyway, if you want to try my nutritious ampalaya con carne recipe just follow my step by step cooking procedure for this ampalaya recipe.

Ingredient :

  • 500 grams of beef sirloin, cut into strips
  • 3 pcs of ampalaya,cleaned and slice
  • 3 tbsp garlic, minced
  • 1 tbsp sesame oil
  • 1 thumb size ginger, julienne
  • 1 pc onion medium size, slice
  • 1/2 cup toyo/ soysauce
  • 2-3 tbsp cornstarch
  • vetsin
  • 1/2 tbsp ground pepper
  • 1 pc Beef cube seasoning
  • 1/2 litre of water
  • 2-3 tbsp cooking oil
  • Patis
  • Blackbeans 2-3 tbsp
  • 1/2 cup cornstarch dissolve in 1/2 cup of water for thickening
Procedure of Cooking for Beef with Ampalaya Recipe

Boil the beef strips on 1/2 litre of water, simmer until the beef tenders. Pour additional water if needed. Drain beef and marinate with soysauce, ground peppercorn, sesame oil for an hour (keep broth to use later). Cover with cornstarch and fry in a heated wok with cooking oil. Do not over fry the meat as it was already tender and pre cook, do the same process to cook everything. In a separate pot, heat 2-3 tbsp cooking oil and sautee garlic, ginger, then onion. Add 2-3 tbsp toyo / soysauce and black beans (tausi) and simmer for 2-5 minutes until black beans tenderize, add beef stock and beef cubes seasoning, bring to boil and simmer. Include ampalaya and cook for 5-7 minutes, salt to taste and add dissolve cornstarch while continously mixing until sauce thickens. Add beef strips, vetsin  and boil for 30 seconds. Served ampalaya con carne recipe while it is hot with hot steamy rice.

If you want to remove some of the bitterness from ampalaya con carne when cooking: Dip ampalaya in boil water for 5 minute or mash ampalaya with 3-4 tbsp of salt then rinse. This method will surely reduced bitterness but will also lessen vegetable nutrients.
