Binagoongang Baboy Recipe

Binagoongang baboy is a traditional Filipino food recipe which are cook with pork and shrimp paste. This appetizer is a popular side dish for kare kare and dippings for mangang hilaw or as a sawsawan for fried fish. But shrimp paste could be a viand itself if cooked with pork and it was known as binagoongang baboy. If you like to cook binagoongang I would suggest to make your bagoong because the shrimp paste available in market is too salty or if you already buy bagoong just put it in strainer and wash it with water to remove excess salt. Anyway if you prefer a home made bagoong I do it this way. In a bowl wash alamang and drain using strainer, be sure that it was totaly drain by shaking strainer and add 3-4 tbsp of salt for every kilo of alamang then mix using ladle then pour it in clean bottle, cover air tight and put under the sun for 4-6 days or until the shrimp ferments.

Ingredient for Binagoongang Baboy Recipe

  • 1/2 Kg of Pork liempo, adobo cut and wash
  • 1 cup of minced garlic
  • 1 /4 cup of sliced onion
  • half cup of kikkoman or soy sauce
  • 1 cup of vinegar
  • Vetsin
  • 1 tbsp Ground peppecorn
  • 1 kg bagoong
  • 1/2 cup of brown sugar
  • 1/2 cup water
Procedure of Cooking :

In a pan, cook liempo with kikkoman or soy sauce, 2 tbsp of garlic, ground pepper and vinegar. Let it dry until the pork start to yield oil. Take the pork from the pan and sautee remaining garlic with onion, then add pork, bagoong, water, vinegar and bring to boil, taste and add vinegar if the bagoong is still salty. When right saltiness is achieve add sugar and continue boiling until the sauce dries. Binagoongang baboy recipe is best served with kare kare or with mangang hilaw, tomato, onion,  as partner for pritong isda.

Bicol Express Recipe

Bikol express recipe is a popular dishes on the southern part of the Philippines, Bicol. People from Bicol or bicolanos usually like to prepare hot spicy recipe for their viand. They are also known for using coconut milk as a main ingredient for their recipe. But the popularity of Bicolanos recipe has extend not only in Bicolandia but also all throughout the Philippines. I was born and raised in Manila but I really love their native food as a matter of fact, I post laing as a first menu on my original native  filipino recipes, which is one of my favorite filipino vegetable recipe. Anyway, here is my method of preparing this delicious filipino dishes - Bicol express

Ingredient:

  • 6 cups of of sliced green chilli pepper (Siling pangsigang)
  • 1 1/2 tbsp salt
  • 3 cups of fresh alamang
  • 1/2 kg of liempo, cut into strips about 1 cm. thick, 1 inch long
  • 2 tbsp of minced garlic
  • 1 head of onion, slice
  • 2 cups of coco milk (gata)
  • 1 cup of coco cream (kakang gata)
  • Salt to taste
  • Vetsin
Procedure of Cooking for Bicol Express Recipe


  • Remove the tip stalk  of the siling haba (Pangsigang), cut down the middle and  take out the seeds. 
  • Dip in salinated water for about 15 minutes.
  • Put on the strainer and drain well. In a casserole, put coconut milk, alamang, pork liempo, minced garlic, chop onion, and salt, boil and simmer for 10 minutes.
  • Add long green chilli and simmer until the sauce dries up
  • Pour coconut cream to dry until the pork start to renders oil, add vetsin and salt to taste.
Served this hot & spicy bicol express with steamy rice.

Preparation Time +- 45 minute
