Pork afritada is another popular Filipino food recipe, from the name itself I would suggest that it is originally a Spanish food recipe that become a special food for Filipino during special gathering or for just day to day recipe. In Philippines, we usually use chicken as the main meat recipe but you could always use other type of meat alternately, Afritada is super delicious and yet so affordable, the ingredient is always available in local market and the procedure for cooking is quite simple.
Pork Afritada Ingredient:
In a casserole with 3 cups of water, bring to boil pork cubes until it tenderizes, remove meat from casserole to cool, set aside. In a heated greaseless pan, add cooking oil then stir fry pork, set aside. In the same pan, sautee garlic, onion, and tomato (if tomato will be used) and simmer for 15 minute or until tomato soften, use ladle to pound tomato. Add pork , pork seasoning cube, patis, potato, carrots, and pork stock. bring to boil and simmer until, carrot and potato tenderized. Add peppercorn, bayleaf, vetsin, and tomato sauce (if you are going to use tomato sauce instead of tomato), simmer for few minute, salt to taste. - 1 pc onion
- 4 pcs medium size potato, quartered
- 1 red bell pepper, cut and remove seed
- 1/8 tsp ground peppercorn
- Pork seasoning cube

- bayleaf
- 1 carrots, cut
