Brazo de mercedes is a Filipino dessert recipes bake from white egg with a custard filling. It has a similarity with another all time favorite- Braso dela Reina
Brazo de Mercedes Meringue :
15 egg white
1 1/2 tsp cream of tartar
1 1/2 cup of sugar

- 15 pcs egg yolk
- 2 can Alaska condensed milk
- unsalted butter
- 2 tsp vanilla extract
- 1/2 tsp lemon extract
- 1 1/2 cup sugar
Preheat the Oven into °250 F
Preparation for Filling:
- In a saucpan, simmer milk over low heat unti decreases by half
- Using saucepan, simmer milk over low heat until it decreases by half,, include sugar, vanilla, butter while constantly stirring. Remove fom heat and set aside.
- In a mixing bowl, beat egg yolk and add carefully milk to eggyolk while continously stiring. Simmer mixture in a double boiler and mix continously to avoid curdling, continue simmering the mixture until the mixture becomes sticky.
Preparation for Meringue:
- Preheat the Oven into °250
- Line a 14" square baking pan, brush shortening and lay parchment paper at the top
- Using a mixing bowl. beat egg white, add cream of tartar and beat again until it stiff (soft peaks stage)
- Carefully pour in the mixture into baking pan, bake until it brown.
- Using another baking pan, lay in another sheet of parchment paper greased with butter, lay cook meringue at the top on opposite side, remove parchment paper.
- Pour in filling at the top and start rolling to form roll in to log.
- Brush with Butter or margarine , sprinkle confectioners sugar (optional) and oven again brazo de mercedes cake to brown.
