Chicken mami, a popular filipino soup recipe for viand or mid day snack and best served with siopao. Term mami is a generic name for a recipe which uses mami noodle, broth and meat ingredient. The term will depends on a kind of meat will be used. So for chicken mami it is obvious that our meat will be chicken based for soup recipe. So let us now start preparing this simple soup recipe chicken.
Ingredient :
Wash the chicken breast and bone with salt (to taste), chicken cubes. Bring to boil and simmer for 20 minute. Take chicken breast from the casserole, cool and shred. Return breast bone to the broth and continue simmering to extract flavor from bone. Wash and boil mami noodles on a separate pot for 1 minute, drain using strainer, set aside.In a separate pot sautee garlic, onion, and shredded chicken. Include in carrot and 2 tbsp of patis, cover and simmer for 3-5 minute.
Preparation for Chicken Mami:
In each bowl include mami noodles, cooked chicken w/ carrots, fresh shredded cabbage and pour in hot steamy chicken broth. - 2 chicken breast boiled in 2.5 litre of water (shredded). set aside ( Keep the broth for later use)
- 1 kg chicken Bone if available

- 1 onion sliced
- 2 head of garlic ( fried)
- 250 grams of mami noodles, Boiled for 1 -2 minute drain and set aside
- 1 pc of medium size carrots, skinned and julienne
- 100 gram of cabbage, wash and shredded
- Spring onion, sliced
- Hard boiled egg, cut
- Ground peppercorn

- Vetsin
- Salt to taste
