Tilapia Pineapple Tidbits with Blackbeans


Tilapia, a well known fish in Philippines. It is very popular because of its price that are so economical and affordable for common Filipino, it is usually grilled, fried, cook for paksiw or sarciado. I have here a tilapia recipe with a twist for adding pineapple to make the recipe more nutritious and delicious.

Ingredient
1 kg Tilapia, scale and wash
2-3 tbsp minced garlic
1 whole onion, sliced
1 tomato , quartered
1 thumbsize ginger, cut into stick
Salt
Patis
2-3 tbsp blackbeans
1 small can del monte pineapple tidbits
Cooking oil
Spring onion
Cornstarch mix with water to thickened

Procedure for Cooking
Rub Tilapia with rock salt then fry, set aside. In a separate pan, sauté garlic, onion, tomato, ginger then add blackbeans cover and simmer for 2-3 minute. Add pineapple tidbits and 1/4 cup syrup , cook for another minute and thickened with slurry. Served this nutritious tilapia recipe with hot steamy rice, enjoy.
