Achara or atsara is a special Filipino side dish for any fried recipe, it could fried fish or pork chop.
Ingredients for Atsara:
1 kg of unripe grated papaya
1 pc medim size carrot, peeled and cut into small strips
1 Tbsp. salt
1 -2 thumbs size ginger cut into strips
10 pcs whole onion tagalog
1 red bell pepper , cut into strips
1 pc green bell pepper, cut into strips
1 - 2 (1.5 ounce) box raisins
Pickling Solution Ingredient:
water
sugar
salt
vinegar
How to Prepare Papaya Achara:
Sprinkle 1/4 cup of salt on grated papaya fruit, let it stand for 1-2 hours. Remove excess water from papaya by squezzing, wrap with cheese cloth (katcha) while squeezing. Mix papaya with raisin and whole onion. Prepare pickling solution by boiling mixture of water, vinegar, salt, and sugar according to taste without stirring. Sterilized bottle by boiling, wipe bottle with clean to dry, transfer papaya and raisin using sterilized tablespoon about 85 percent of bottle volume then filled to cover with cook pickling solution, let it stand for 2 - 3 days. Achara is usually served as a side dish for dried food such as fried and grill. Enjoy....
