Pineapple Chicken Recipe Ingredient:
1 kg dressed chicken
1 - 2 potato, quartered
1 carrots, cut into cube
1 can pineapple chunks with juice (2 cups)
2-3 tbsp minced garlic
1 whole onion, slice
1/8 tbsp ground peppercorn
vetsin (optional)
cooking oil
Patis (fish sauce)
salt to taste
Pineapple Chicken Direction for Cooking:
In a mixing bowl, marinate chicken with pineapple juice, salt, vetsin for 2-3 hours. In a heated pan with cooking oil, saute garlic, onion then add chicken, patis and simmer for 15-20 minute, Add marinates, potato and carrots, boil and simmer until potato and carrots tenderized. Include pineapple chunks and salt to taste, simmer until sauce almost dries. Served Pineapple chicken with hot steamy rice. Enjoy..
