Fried chicken is a popular filipino recipe especially for kids. Every Filipino has a lot of version for frying chicken and I have my own version too. Here is one of my method for cooking fried chicken.
Cooking Ingredient:
Cooking oil for deep frying
1 kg chicken drumstick
1 1/2 cup of patis (fish sauce)
15-20 big calamansi, juiced and remove seed
Vetsin (optional)
1/2 tbsp ground peppercorn
Fried Chicken Procedure for Cooking:
In a mixing bowl, mix together patis, calamansi juice, vetsin, ground peppercorn and marinate chicken over night. In a heated frying pan, add cooking oil enough to deep fry chicken. When the oil is hot, add drumstick to fry for 10 - 12 minute or until chicken is well done. Served newly fried chicken while it is hot along with catsup and hot steamy rice
